Ingredients

  • 1 pound lean ground beef
  • 1 white onion, diced
  • 1 green bell pepper, diced
  • 1 cup uncooked white rice
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 1 cup frozen green beans
  • 1 cup shredded cheddar cheese
  • 1.5 cups water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika

Directions

Step 1

Heat a non-stick skillet over medium heat and brown the ground beef until fully cooked. Drain any excess fat.

Step 2

In a mixing bowl, combine the diced onion, green bell pepper, cooked ground beef, salt, black pepper, garlic powder, and paprika. Mix well.

Step 3

Grease the inside of a 6-quart crock pot lightly with cooking spray or a small amount of oil.

Step 4

Start layering the ingredients. Begin with the uncooked white rice as the first layer at the bottom of the crock pot.

Step 5

Add the ground beef and vegetable mixture as the second layer.

Step 6

Pour the canned diced tomatoes (with their juice) evenly over the ground beef to form the third layer.

Step 7

Spread the frozen green beans on top as the fourth layer.

Step 8

Gently pour the water and tomato sauce over the green beans to combine as the fifth layer. Do not stir.

Step 9

Add the shredded cheddar cheese on top as the sixth layer, but hold off on sprinkling until the casserole is nearly done (about the last 15-20 minutes of cooking).

Step 10

Cover the crock pot with its lid and cook on low heat for 6 hours or until the rice is tender and the layers are fully heated through.

Step 11

Sprinkle the cheese evenly over the casserole in the last 15-20 minutes of cooking to allow it to melt completely.

Step 12

Once cooked, use a spatula to scoop out portions of the casserole, keeping the layers intact. Serve warm and enjoy!
