  • 2 tbsp Tomato paste
  • 4 cloves Garlic, minced
  • 1 Yellow onion, finely chopped
  • 2 Celery stalks, thinly sliced
  • 0.5 cup Dry white wine
  • 1 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • 1 Bay leaf
  • 1 tsp Salt
  • 0.5 tsp Freshly ground black pepper
  • 2 tbsp Fresh parsley, chopped, for garnish
  • 1 loaf Crusty bread, for serving (optional)

Directions

Step 1

In a large skillet over medium heat, warm the olive oil. Add the chopped onion and celery, and sauté for 3-4 minutes until softened.

Step 2

Add the minced garlic, and cook for another 1 minute until fragrant. Transfer the cooked vegetables to the crock pot.

Step 3

Pour the chicken broth, diced tomatoes (with juice), tomato paste, and white wine into the crock pot. Stir to combine.

Step 4

Add the dried oregano, dried thyme, bay leaf, salt, and pepper to the crock pot. Mix well.

Step 5

Cover the crock pot and cook on LOW for 3 hours to allow the flavors to meld together.

Step 6

After 3 hours, add the cubed white fish, scallops, and shrimp to the crock pot. Gently stir to ensure the seafood is submerged in the liquid.

Step 7

Cover and continue cooking on LOW for another 1 hour, or until the seafood is cooked through and tender.

Step 8

Remove the bay leaf from the crock pot and taste the broth. Adjust seasoning with additional salt and pepper, if needed.
