Ingredients

  • 4 pieces Chicken breasts
  • 4 medium-sized Russet potatoes
  • 1 medium-sized Onion
  • 2 cans (10.5 oz each) Cream of chicken soup
  • 1 cup Chicken broth
  • 1.5 cups, shredded Cheddar cheese
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Peel and thinly slice the potatoes into 1/8-inch thick rounds. Set them aside in a bowl of cold water to prevent browning.

Step 2

Chop the onion into thin slices.

Step 3

Spray the inside of the crock pot with non-stick cooking spray or lightly grease it with butter.

Step 4

Layer half of the sliced potatoes at the bottom of the crock pot. Top with half of the chopped onions.

Step 5

Season the potato and onion layer with 0.5 teaspoon of salt, 0.25 teaspoon of black pepper, and a sprinkle of garlic powder.

Step 6

Place the chicken breasts over the potato and onion layer.

Step 7

In a bowl, mix together the cream of chicken soup, chicken broth, 1 cup of shredded cheddar cheese, garlic powder, dried thyme, and the remaining salt and pepper until smooth.

Pour the soup mixture evenly over the chicken and vegetables.

Add the remaining sliced potatoes and onions on top. Spread them in an even layer.
