Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 can canned crushed tomatoes (28 ounces)
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cups uncooked pasta (e.g., penne or rotini)
  • 0.5 cup Parmesan cheese, grated (optional)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Add the Italian sausage and cook until browned, breaking it into small crumbles with a spatula. Once cooked through, transfer the sausage to the crock pot.

Step 2

In the same skillet, sauté the diced onion, minced garlic, carrots, and celery for 3-4 minutes until softened and fragrant. Transfer the sautéed vegetables to the crock pot.

Step 3

Add the crushed tomatoes, chicken or vegetable broth, Italian seasoning, dried basil, salt, and pepper to the crock pot. Stir everything to combine.

Step 4

Cover the crock pot with the lid and cook on low for 6-7 hours or on high for 3-4 hours.

Step 5

30 minutes before the cooking time is up, add the uncooked pasta to the crock pot. Stir well to ensure the pasta is fully submerged in the liquid.

Step 6

Continue cooking for an additional 30 minutes until the pasta is tender.

Step 7

Taste and adjust salt and pepper if needed. Serve hot, topped with grated Parmesan cheese and fresh parsley if desired.
