Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 4 medium Russet potatoes, peeled and diced
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, peeled and sliced
  • 2 stalks Celery stalks, sliced
  • 3 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Remove the sausage from its casing (if applicable) and brown it in a skillet over medium heat, breaking it apart with a wooden spoon. Drain excess fat and set aside.

Step 2

Peel and dice the potatoes, dice the onion, peel and slice the carrots, and slice the celery stalks. Mince the garlic as well.

Step 3

In a 6-quart crock pot, add the browned sausage, diced potatoes, onion, carrots, celery, and minced garlic.

Pour the chicken broth over the ingredients. Add salt, black pepper, dried thyme, and paprika. Stir to combine.
