  • 2 pounds Italian sausage (mild or hot)
  • 2 large Red bell peppers
  • 2 large Green bell peppers
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 28 ounces Crushed tomatoes
  • 6 ounces Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and sear on all sides until browned, about 5 minutes. Work in batches if necessary. Transfer the sausages to the crock pot.

Step 2

Cut the red and green bell peppers into thin strips. Slice the onion into rings. Mince the garlic cloves.

Add the sliced peppers, onion, and garlic to the crock pot, arranging them around and over the sausages.
