Ingredients

  • 1 Green bell pepper (diced)
  • 1 large Onion (diced)
  • 3 cloves Garlic (minced)
  • 2 tbsp Tomato paste
  • 2 tsp Cajun seasoning
  • 1 tsp Paprika
  • 1 tsp Dried thyme
  • 2 Bay leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil
  • 2 tbsp Fresh parsley (for garnish, chopped)

Directions

Step 1

Heat olive oil in a skillet over medium heat. Add the Andouille sausage, sliced into rounds, and cook until browned. Transfer to the crock pot.

Step 2

In the same skillet, sauté the diced onion, celery, and green bell pepper until softened, about 5 minutes. Add the minced garlic and cook for another minute. Transfer the mixture to the crock pot.

Step 3

Add the barley, chicken broth, diced tomatoes with their juices, tomato paste, Cajun seasoning, paprika, thyme, bay leaves, salt, and black pepper to the crock pot.
