Ingredients

  • 3 pounds Boneless beef chuck roast
  • 1 cup White vinegar
  • 1 cup Red wine vinegar
  • 2 cups Beef broth
  • 1 large Onion, sliced
  • 3 Carrots, peeled and cut into chunks
  • 2 Bay leaves
  • 10 Whole black peppercorns
  • 0.25 teaspoons Ground cloves
  • 2 tablespoons Granulated sugar
  • 10 Gingersnaps, crushed
  • 1.5 teaspoons Salt
  • 2 tablespoons Vegetable oil

Directions

Step 1

Heat the vegetable oil in a large skillet over medium-high heat. Sear the beef chuck roast on all sides until browned, about 3-4 minutes per side.

Place the seared roast into the crock pot.

Step 3

In a medium bowl, combine the white vinegar, red wine vinegar, beef broth, sugar, salt, cloves, bay leaves, and peppercorns. Mix well and pour over the roast in the crock pot.

Add the sliced onion and carrots around the roast.

Cover the crock pot with the lid and cook on LOW for 8 hours, or until the beef is tender and easily pulls apart with a fork.
