  • 2 medium parsnips, peeled and chopped into 1-inch pieces
  • 2 large russet potatoes, peeled and chopped into 1-inch cubes
  • 2 stalks celery stalks, chopped
  • 4 cups beef or lamb broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 leaves bay leaves
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Season the lamb cubes with 1 teaspoon of salt and the black pepper.

Sear the lamb cubes in batches until browned on all sides, about 3-4 minutes per batch. Transfer the browned lamb to the crock pot.
