Ingredients

  • 4 pounds whole chicken
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1.5 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 whole lemon
  • 4 whole garlic cloves
  • 1 medium yellow onion
  • 0.5 cups chicken broth (optional)

Directions

Step 1

Remove giblets from the whole chicken and pat the chicken dry with paper towels.

Step 2

Rub the outside of the chicken with olive oil to help the seasonings stick and create a golden, crispy texture.

Step 3

In a small bowl, mix together the salt, black pepper, garlic powder, paprika, dried thyme, and onion powder.

Step 4

Sprinkle the seasoning blend evenly over the entire surface of the chicken, including inside the cavity.

Step 5

Cut the lemon in half and place it inside the chicken cavity along with the peeled garlic cloves.

Step 6

Peel and quarter the yellow onion, then spread the chunks across the bottom of the crock pot to act as a base for the chicken.

Step 7

If desired, pour 1/2 cup of chicken broth into the bottom of the crock pot to add moisture and flavor.

Place the chicken breast-side up on top of the onion chunks in the crock pot.

Step 9

Cover the crock pot with the lid and cook on high for 4-5 hours or on low for 6-7 hours, until the internal temperature of the chicken reaches 165°F (74°C) in the thickest part of the breast.

Once cooked, carefully transfer the chicken from the crock pot to a cutting board and let it rest for 10 minutes before carving.
