Ingredients

  • 3 pounds beef chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 4 medium carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and quartered
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 cup water

Directions

Step 1

Pat the beef chuck roast dry with paper towels. Season all over with salt, pepper, garlic powder, and onion powder.

Step 2

In a large skillet over medium-high heat, heat the olive oil. Sear the roast on all sides until browned, about 3-4 minutes per side.

Place the sliced onion, carrots, and potatoes in the bottom of the crock pot, creating a bed for the roast.

Set the seared roast on top of the vegetables in the crock pot.

Pour the beef broth and Worcestershire sauce over the roast and vegetables.
