Ingredients

  • 1 pound ground beef (or ground venison, if preferred for a more 'authentic' twist)
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, peeled and diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 14.5 ounces diced tomatoes (with juice)
  • 1 cup frozen corn kernels
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf

Directions

Step 1

In a skillet, brown the ground beef over medium-high heat until fully cooked. Drain any excess fat and transfer the cooked beef to the crock pot.

Step 2

Add the diced onion, sliced carrots, chopped celery, and diced potatoes into the crock pot.

Step 3

Stir in the minced garlic, beef broth, and diced tomatoes (with their juice).

Step 4

Add the frozen corn and peas to the mixture, followed by the dried thyme, oregano, salt, pepper, and bay leaf.

Step 5

Stir all the ingredients together until well combined.

Step 6

Cover the crock pot with its lid and set it to cook on low for 6-8 hours, or until the vegetables are tender and the flavors have melded together.

Step 7

Taste and adjust seasoning as needed, removing the bay leaf before serving.

Step 8

Ladle the soup into bowls and serve hot with some crusty bread on the side, if desired.
