Ingredients

  • 1.5 cups long-grain white rice
  • 4 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 0.5 cup frozen peas
  • 1 medium red bell pepper, diced
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse the rice under cold water until the water runs clear, then drain it well.

Step 2

In a large skillet over medium heat, add olive oil and sauté the onion for 2-3 minutes until translucent.

Step 3

Add the garlic to the skillet and cook for another 1 minute until fragrant.

Step 4

Transfer the rinsed rice, sautéed onion and garlic, carrots, zucchini, peas, bell pepper, and vegetable broth into the crock pot.

Step 5

Sprinkle the Italian seasoning, salt, and black pepper evenly over the ingredients in the crock pot.

Step 6

Stir everything gently to ensure the rice and vegetables are evenly distributed and submerged in the liquid.

Step 7

Cover the crock pot with the lid and set it to cook on high for 2-3 hours, or on low for 4-5 hours, until the rice is tender and has absorbed most of the liquid.

Step 8

Once cooked, fluff the rice gently with a fork and serve while warm.
