Ingredients

  • 1 cup long-grain white rice
  • 4 cups whole milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.75 cup dried cherries
  • 0.5 cup slivered almonds
  • 0.25 teaspoon salt

Directions

Step 1

Rinse the rice under cold water until the water runs clear. This helps remove excess starch for a smoother pudding.

Step 2

In a crock pot, add the rinsed rice, whole milk, heavy cream, granulated sugar, butter, vanilla extract, ground cinnamon, and salt.

Step 3

Stir the mixture thoroughly to combine all ingredients evenly.

Step 4

Cover the crock pot with its lid and set it to cook on low for 3 to 3.5 hours. Stir the pudding every 45-60 minutes to prevent the rice from sticking to the bottom or clumping.

Step 5

30 minutes before the end of cooking time, add the dried cherries and stir them into the pudding.

Step 6

Once the pudding has thickened and the rice is fully cooked, turn off the crock pot.

Step 7

Stir in the slivered almonds, reserving some for garnish if desired.

Step 8

Serve warm or chilled, garnished with a sprinkle of cinnamon and additional cherries or almonds, if desired.
