Ingredients

  • 2 cups Dried pinto beans
  • 8 cups Water
  • 1 large Onion
  • 4 whole Garlic cloves
  • 1 tablespoon Salt
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lard or butter (optional)

Directions

Step 1

Sort through the dried pinto beans to remove any debris or stones. Rinse the beans thoroughly under cold water.

Step 2

Peel and halve the onion. Keep it in large pieces to make it easy to remove later.

Step 3

Add the rinsed beans, water, halved onion, and whole garlic cloves to the crock pot.

Step 4

Cover the crock pot with the lid and cook on low for 8 hours or high for 4-5 hours. The beans should be tender when done.

Step 5

Once cooked, remove the onion pieces and garlic cloves from the crock pot.

Step 6

Drain the beans, reserving about 2 cups of the cooking liquid for later use.

Return the beans to the crock pot. Add salt, ground cumin, black pepper, and lard or butter (if using).

Using a potato masher or an immersion blender, mash the beans to your desired consistency. Add the reserved cooking liquid gradually to make the beans creamier if needed.
