Ingredients

  • 6 medium Russet potatoes
  • 2 medium Yellow onions
  • 3 tablespoons Unsalted butter
  • 3 Garlic cloves
  • 1 teaspoon Fresh thyme leaves
  • 2 teaspoons Fresh parsley
  • 2.5 cups Chicken or vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil (optional)

Directions

Step 1

Peel and thinly slice the russet potatoes and yellow onions using a sharp knife or mandoline. Aim for 1/8-inch thick slices for even cooking.

Step 2

Mince the garlic cloves and chop the fresh parsley. Set aside.

Step 3

Grease the inside of the crock pot with olive oil or a thin layer of butter to prevent sticking.

Step 4

Layer the sliced potatoes and onions alternately in the crock pot, starting with a layer of potatoes. Lightly sprinkle each potato layer with minced garlic, salt, black pepper, and fresh thyme.

Step 5

Dot the top layer with small pieces of unsalted butter for added richness.

Step 6

Slowly pour the chicken or vegetable broth over the layers, ensuring the liquid reaches the edges and slightly covers the potatoes at the bottom of the crock pot.

Step 7

Cover the crock pot with the lid and set it to low heat. Cook for 5 hours, or until the potatoes are tender and the broth has mostly absorbed.

Step 8

Once cooked, garnish the dish with freshly chopped parsley for a burst of color and flavor.

Step 9

Serve warm as a side dish alongside roasted meats, grilled fish, or a green salad.
