Ingredients

  • 4 pounds Pork shoulder or pork butt roast
  • 6 whole Garlic cloves
  • 2 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Smoked paprika
  • 1 large Onion, chopped
  • 1 cup Chicken broth
  • 3 large Carrots, peeled and cut into chunks
  • 4 medium Potatoes, quartered
  • 1 whole Bay leaf

Directions

Step 1

Pat the pork roast dry with paper towels. Using a small knife, make six small slits evenly around the roast and insert a garlic clove into each slit.

Step 2

Rub the pork roast with olive oil, then season it all over with salt, black pepper, dried thyme, and smoked paprika.

Step 3

In the bottom of a large crock pot, add the chopped onion, carrots, and potatoes to create a flavorful vegetable base.
