Ingredients

  • 3 pounds Pork shoulder roast
  • 32 ounces Sauerkraut
  • 1 large Yellow onion
  • 1 large Apple (Granny Smith or other tart variety)
  • 1 teaspoon Caraway seeds
  • 2 tablespoons Brown sugar
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 cloves Minced garlic

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil.

Step 2

Season the pork shoulder roast with salt and pepper on all sides.

Step 3

Sear the pork roast in the skillet, cooking for 2-3 minutes on each side until browned. Remove and set aside.

Step 4

Thinly slice the yellow onion and core and slice the apple into thin wedges.

Step 5

Drain the sauerkraut slightly if it contains excess liquid, but do not rinse.

In the bottom of a 6-quart crock pot, layer the sauerkraut, onions, and apple slices.
