  • 4 large carrots
  • 1 large yellow onion
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1.5 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Peel and cut the russet potatoes into quarters and set them aside.

Step 2

Peel the carrots and cut them into large chunks about 2 inches long.

Step 3

Dice the yellow onion into medium-sized pieces.

Step 4

Peel and mince the garlic cloves.

Step 5

Heat the olive oil in a large skillet over medium-high heat.

Step 6

Season the pork shoulder roast on all sides with salt, black pepper, paprika, dried thyme, and dried rosemary.

Step 7

Sear the pork roast in the hot skillet for 2-3 minutes per side until browned. This step helps to lock in the flavors.

Step 8

In the crock pot, layer the onions, potatoes, and carrots at the bottom to create a bed for the pork.

Step 9

Place the seared pork roast on top of the vegetables.

Step 10

Pour the beef broth and Worcestershire sauce over the pork and vegetables.

Step 11

Sprinkle the minced garlic evenly over the pork and vegetables.

Step 12

Cover the crock pot with the lid and set to cook on low for 8 hours or on high for 4-5 hours.

Step 13

Once the pork is tender and easily pulls apart with a fork, turn off the crock pot.

Step 14

Taste and adjust seasoning with additional salt or pepper if needed.

Step 15

Serve the pork roast alongside the tender carrots and potatoes with a spoonful of the flavorful juices from the crock pot.
