Ingredients

  • 3 pounds Boneless pork loin roast
  • 1 teaspoons Salt
  • 1 teaspoons Black pepper
  • 1 teaspoons Garlic powder
  • 1 teaspoons Dried thyme
  • 2 tablespoons Olive oil
  • 12 ounces Dry stuffing mix
  • 2 cups Chicken broth
  • 1 cup Diced onion
  • 1 cup Chopped celery
  • 2 tablespoons Unsalted butter
  • 1 tablespoons Dried parsley

Directions

Step 1

Pat the pork roast dry with paper towels. Season it on all sides with salt, black pepper, garlic powder, and dried thyme.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the pork roast on all sides until golden brown, about 3-4 minutes per side. Remove from skillet and set aside.

Step 3

In the same skillet, sauté the diced onion and chopped celery in the butter until softened and fragrant, about 5 minutes. Remove from heat.

In a large mixing bowl, combine the dry stuffing mix, sautéed onion and celery, chicken broth, and dried parsley. Stir until the stuffing mix is fully moistened.

Lightly grease the inside of a slow cooker with non-stick cooking spray. Add a layer of the stuffing mixture to the bottom of the crock pot.

Place the seared pork roast on top of the stuffing mixture, then spoon the remaining stuffing around and over the pork roast.

Cover the slow cooker with its lid and cook on low for 8 hours, or until the pork is tender and fully cooked (internal temperature of 145°F).

Once cooked, carefully remove the pork roast and let it rest for 10 minutes before slicing.
