Ingredients

  • 3 lbs pork shoulder roast
  • 32 oz sauerkraut
  • 1 medium onion
  • 1 medium apple
  • 2 tbsp brown sugar
  • 1 tsp caraway seeds
  • 1 cup chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil

Directions

Step 1

Season the pork shoulder roast with salt and black pepper on all sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the pork on all sides until browned, about 2-3 minutes per side. This step enhances the flavor of the dish.

Step 3

While the pork is searing, drain and rinse the sauerkraut to remove excess brine. Transfer the sauerkraut to the crock pot.

Step 4

Peel and dice the onion into small pieces. Core and dice the apple into small cubes. Add the onion and apple to the crock pot on top of the sauerkraut.

Step 5

Sprinkle the brown sugar and caraway seeds evenly over the sauerkraut mixture.

Step 6

Once the pork is seared, place it on top of the sauerkraut mixture in the crock pot.

Step 7

Pour the chicken broth over the pork and sauerkraut to keep everything moist during cooking.

Step 8

Cover the crock pot with the lid and cook on low heat for 8 hours or until the pork is tender and easily shreddable.

Step 9

Once done, shred or slice the pork as desired and serve with sauerkraut, making sure to spoon some of the juices from the crock pot over the dish for extra flavor.

Step 10

Enjoy with mashed potatoes, crusty bread, or your favorite side dish!
