Ingredients

  • 2 pounds pork loin
  • 4 medium (about 2 pounds) sweet potatoes

  • 1 medium yellow onion
  • 1 cup chicken broth
  • 0.25 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil

Directions

Step 1

Peel the sweet potatoes and cut them into 1-inch chunks. Core and slice the apples into wedges. Peel and thinly slice the onion.

Step 2

In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, ground cinnamon, garlic powder, salt, and black pepper.

Heat the olive oil in a large skillet over medium-high heat. Sear the pork loin for 2-3 minutes on each side until browned. Remove from the heat.
