Ingredients

  • 4 pieces bone-in pork chops
  • 32 ounces sauerkraut
  • 1 medium yellow onion, thinly sliced
  • 1 large apple, peeled, cored, and sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon caraway seeds (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup chicken broth
  • 2 tablespoons olive oil

Directions

Step 1

Season the pork chops on both sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2-3 minutes on each side, until golden brown. Transfer the pork chops to the crock pot.

Step 3

In the same skillet, add the sliced onions and cook for 2-3 minutes until softened, then transfer them to the crock pot.

Step 4

Drain the sauerkraut and spread it evenly over the pork chops and onions in the crock pot.

Step 5

Add the sliced apple on top of the sauerkraut.

Step 6

Sprinkle the brown sugar and caraway seeds (if using) evenly over the sauerkraut and apples.

Step 7

Pour the chicken broth over the mixture in the crock pot.

Step 8

Cover the crock pot with its lid and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the pork chops are tender.

Step 9

Taste and adjust seasoning with additional salt and pepper if needed before serving.

Step 10

Serve the pork chops alongside the sauerkraut mixture, and enjoy with mashed potatoes, rye bread, or another hearty side dish.
