Ingredients

  • 2 pounds Pork shoulder, cubed
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 cups Chicken broth
  • 1 cup Dried cranberries
  • 2 large Apple, peeled, cored, and chopped
  • 3 medium Carrots, peeled and sliced
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Rosemary, dried
  • 0.5 teaspoon Cinnamon
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season the cubed pork shoulder with salt and black pepper.

Step 2

Heat the olive oil in a skillet over medium-high heat. Sear the pork cubes on all sides until browned, about 2-3 minutes per side. Transfer the seared pork to the crock pot.

Step 3

In the same skillet, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 1 minute. Transfer the mixture to the crock pot.

Step 4

Add the chicken broth, dried cranberries, chopped apples, sliced carrots, thyme, rosemary, and cinnamon to the crock pot. Stir to combine.
