Ingredients

  • 1 lb ground beef
  • 1 medium Russet potato, diced
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, diced
  • 3 cloves garlic cloves, minced
  • 8 oz tomato sauce
  • 14.5 oz diced tomatoes
  • 0.5 cup green olives with pimentos, sliced
  • 2 tbsp capers
  • 0.25 cup raisins
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup chicken broth
  • 1 tbsp vegetable oil

Directions

Step 1

Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat and transfer the cooked meat to the crock pot.

Step 2

In the same skillet, sauté the onion and green bell pepper until softened, about 3-4 minutes. Stir in the garlic and cook for an additional 1 minute. Add this mixture to the crock pot.

Step 3

To the crock pot, add the diced potato, tomato sauce, diced tomatoes (with their juice), green olives, capers, raisins, ground cumin, oregano, smoked paprika, salt, black pepper, and chicken broth. Stir everything together to combine well.
