  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 1 Yellow onion, sliced
  • 4 Carrots, peeled and cut into 2-inch pieces
  • 6 Red potatoes, quartered
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 Bay leaf
  • 3 Fresh thyme sprigs

Directions

Step 1

Season the chuck roast on all sides with kosher salt, black pepper, garlic powder, onion powder, and paprika.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Sear the roast on all sides until browned, about 3-4 minutes per side. This step is optional but adds depth of flavor.
