Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 28 oz Crushed tomatoes
  • 6 oz Tomato paste
  • 1 medium (diced) Yellow onion
  • 4 cloves (minced) Garlic cloves
  • 8 oz (sliced) Mushrooms
  • 1 medium (grated) Carrot
  • 1 tbsp Olive oil
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 2 tbsp (chopped, for garnish) Fresh parsley

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Sear the chicken breasts for 2-3 minutes on each side until lightly browned. Do not cook through. Transfer the chicken to the crock pot.

Step 2

In the same skillet, add the diced onion, minced garlic, and sliced mushrooms. Sauté for 3-4 minutes until the onion is translucent and the mushrooms are slightly softened. Transfer the mixture to the crock pot.

Step 3

Add the crushed tomatoes, tomato paste, grated carrot, dried basil, dried oregano, salt, black pepper, and optional red pepper flakes into the crock pot. Stir gently to combine the ingredients and coat the chicken with the sauce.
