Ingredients

  • 1 pound ground beef
  • 2 carrot, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves minced garlic
  • 28 ounces diced tomatoes (with juices)
  • 15 ounces tomato sauce
  • 15 ounces red kidney beans, drained and rinsed
  • 15 ounces great northern beans, drained and rinsed
  • 4 cups low-sodium beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup dried ditalini pasta
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 0 grated Parmesan cheese (optional, for serving)

Directions

Step 1

In a large skillet over medium heat, brown the ground beef, breaking it into crumbles. Drain excess fat and transfer the cooked beef to the crock pot.

Step 2

Add the diced carrots, celery, onion, and minced garlic to the crock pot.

Step 3

Pour in the diced tomatoes (with juices), tomato sauce, and beef broth.

Step 4

Stir in the kidney beans, great northern beans, dried basil, dried oregano, dried thyme, salt, and black pepper.

Step 5

Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until vegetables are tender and flavors are well combined.

Step 6

Thirty minutes before serving, add the ditalini pasta to the crock pot. Stir well and let it cook on HIGH until the pasta is tender, about 20-30 minutes.

Step 7

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 8

Serve hot, garnished with chopped fresh parsley and grated Parmesan cheese, if desired.
