Ingredients

  • 4 pieces Pork chops, bone-in or boneless
  • 2 cups Onion, thinly sliced
  • 3 cloves Garlic cloves, minced
  • 1.5 cups Beef or chicken broth
  • 2 tablespoons Dijon mustard
  • 0.5 cups Heavy cream
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season the pork chops with salt and black pepper on both sides.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Sear the pork chops for 2-3 minutes per side until golden brown. Transfer to a crock pot.

Step 3

In the same skillet, add the remaining olive oil and butter. Add the sliced onions and sauté for 5-7 minutes until softened and slightly caramelized.

Step 4

Stir in the minced garlic, cooking for another 1-2 minutes until fragrant. Spoon the onion and garlic mixture over the pork chops in the crock pot.

Step 5

In a small bowl, whisk together the broth, Dijon mustard, Worcestershire sauce, and 1/4 teaspoon of salt. Pour this mixture over the pork chops and onions.

Step 6

Cover the crock pot with the lid and cook on low for 4-5 hours, or until the pork chops are tender and cooked through.

Step 7

Once done, carefully remove the pork chops from the crock pot and set aside. Turn the crock pot to the warm setting.

Step 8

In a small bowl, mix the cornstarch and water to form a slurry. Stir this into the sauce in the crock pot and then add the heavy cream. Stir well until the sauce is thickened and creamy.

Step 9

Return the pork chops to the crock pot and spoon the sauce over them. Allow them to warm through for 5-10 minutes.

Step 10

Serve the pork chops with the creamy mustard sauce drizzled over the top. Enjoy with mashed potatoes, rice, or steamed vegetables.
