Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 2 cloves, minced garlic
  • 2 cups beef broth
  • 15 ounces (canned) diced tomatoes
  • 8 ounces (canned) tomato sauce
  • 2 cups uncooked elbow macaroni
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional for topping)
  • 2 tablespoons, chopped fresh parsley (optional for garnish)

Directions

Step 1

In a skillet over medium-high heat, cook the ground beef until browned. Break it up with a wooden spoon as it cooks. Drain any excess fat and transfer the beef to your crock pot.

Step 2

Add the diced onion and minced garlic to the crock pot along with the cooked beef.

Step 3

Pour in the beef broth, diced tomatoes (with their juice), and tomato sauce.

Step 4

Stir in the paprika, dried oregano, dried basil, salt, and black pepper. Mix everything together thoroughly.

Step 5

Cover the crock pot with a lid and cook on low heat for 3 to 4 hours, allowing the flavors to meld together.

Step 6

About 40 minutes before serving, stir in the uncooked elbow macaroni. Replace the lid and allow the pasta to cook through, stirring occasionally to prevent sticking.

Step 7

Taste and adjust seasoning, adding more salt or pepper if needed.

Step 8

Serve warm, topped with shredded cheddar cheese and chopped fresh parsley, if desired.
