Ingredients

  • 1.5 pounds beef stew meat (cubed)
  • 4 medium potatoes (peeled and diced)
  • 3 large carrots (sliced)
  • 2 stalks celery (sliced)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon worcestershire sauce
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 cup frozen peas

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Toss the beef stew meat with flour until evenly coated.

Step 3

Sear the beef in the skillet, browning all sides. This step locks in the flavor. Transfer browned meat to the crock pot.

Step 4

Add the potatoes, carrots, celery, onion, and garlic to the crock pot.

Step 5

Pour beef broth over the ingredients in the crock pot.

Step 6

Stir in the tomato paste, Worcestershire sauce, salt, black pepper, thyme, and bay leaves.

Step 7

Cover the crock pot with the lid and set it to low heat. Cook for 8 hours or until the beef is tender and the vegetables are soft.

Step 8

During the last 30 minutes of cooking, stir in the frozen peas.

Step 9

Before serving, remove the bay leaves.

Step 10

Ladle the stew into bowls and serve warm with crusty bread, if desired.
