  • 1 cup uncooked long-grain white rice
  • 1.5 cups chicken or beef broth
  • 2 tbsp taco seasoning
  • 1.5 cups shredded cheddar cheese
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup sour cream (optional, for topping)
  • 1 bag tortilla chips (optional, for serving)

Directions

Step 1

In a large skillet over medium heat, cook the ground beef (or turkey), breaking it up with a spoon until it is browned and cooked through. Drain any excess fat.

Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion becomes translucent and the garlic is fragrant.

Transfer the cooked meat mixture to the crock pot.
