Ingredients

  • 3 pounds Beef chuck roast
  • 1 large Yellow onion
  • 4 units Garlic cloves
  • 10 ounces Diced tomatoes with green chilies (Rotel or similar)
  • 1 cup Beef broth
  • 1 teaspoon Chipotle chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh lime juice
  • 0.25 cup Fresh cilantro

Directions

Step 1

Peel and dice the yellow onion into small pieces. Mince the garlic cloves.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the beef chuck roast on all sides until browned, about 2-3 minutes per side. Transfer the roast to the crock pot.

Step 3

In the same skillet, sauté the diced onion and garlic until soft and fragrant, about 2 minutes. Add them to the crock pot.

Pour the diced tomatoes with green chilies and beef broth over the roast in the crock pot.
