  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 pounds Baby potatoes
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Garlic powder (for potatoes)
  • 0.5 teaspoon Paprika
  • 2 large sheets Aluminum foil
  • 0.25 cup Ketchup (for topping)

Directions

Step 1

In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, onion powder, garlic powder, dried parsley, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Step 2

Shape the meat mixture into a loaf form and place it on a large sheet of aluminum foil. Wrap the meatloaf securely in the foil to create a packet, leaving a small seam on top for venting.

Wash and halve the baby potatoes. In a separate bowl, toss the potatoes with olive oil, garlic powder, paprika, and a pinch of salt and pepper. Mix until evenly coated.

Cut another large sheet of aluminum foil, place the seasoned potatoes in the center, and wrap them tightly to form a packet.

Place the potato packet at the bottom of the crock pot. Add the meatloaf packet on top, ensuring they are slightly elevated to allow proper cooking.

Cover the crock pot with its lid and cook on low for 5 hours (or on high for 3 hours).

After the cooking time, carefully open the foil packets. Spread 1/4 cup of ketchup over the top of the meatloaf and let it cook uncovered on high for an additional 10 minutes to glaze.

Remove the packets from the crock pot. Let the meatloaf rest for 5 minutes before slicing. Serve hot with the tender potatoes on the side.
