Ingredients

  • 24 pieces Frozen meatballs
  • 3 large Russet potatoes
  • 4 medium Carrots
  • 3 stalks Celery stalks
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 4 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 whole Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Slice the carrots and celery into bite-sized pieces. Dice the onion, and mince the garlic.

Step 2

In a 6-quart crock pot, layer the frozen meatballs at the bottom.

Step 3

Add the diced potatoes, carrots, celery, onion, and garlic to the crock pot evenly over the meatballs.

Step 4

In a mixing bowl, combine the beef broth, tomato paste, dried thyme, dried oregano, salt, and black pepper. Stir until well combined.

Pour the broth mixture over the meatballs and vegetables in the crock pot. Add the bay leaf on top.
