Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups Maple syrup
  • 0.25 cups Dijon mustard
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Apple cider vinegar
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Fresh thyme leaves (optional, for garnish)

Directions

Step 1

Spray the inside of your Crock Pot with non-stick cooking spray or line it with a slow cooker liner for easy cleanup.

Step 2

Place the chicken breasts in a single layer at the bottom of the Crock Pot.

Step 3

In a medium-sized mixing bowl, whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, olive oil, salt, and black pepper until well-combined.

Step 4

Pour the maple Dijon mixture evenly over the chicken breasts, ensuring they are fully coated.

Step 5

Cover the Crock Pot with the lid and set it to cook on low heat for 4-5 hours, or until the chicken reaches an internal temperature of 165°F (74°C) and is tender and easy to shred.

Step 6

Once cooked, carefully remove the chicken breasts from the Crock Pot and transfer them to a serving plate. Optional: Spoon some of the cooking liquid over the chicken to keep it moist and flavorful.

Step 7

Garnish with fresh thyme leaves if desired.

Step 8

Serve the chicken warm with your favorite sides, such as steamed vegetables, roasted potatoes, or rice.
