Ingredients

  • 1 cup green lentils
  • 1.5 cup ham (diced or leftover ham bone)
  • 1 medium yellow onion (chopped)
  • 3 medium carrots (sliced)
  • 2 medium celery stalks (sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 whole bay leaf
  • 6 cups chicken stock
  • 1 can (14.5 ounces) canned diced tomatoes (with juice)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Rinse the lentils thoroughly under cold water and set aside.

Step 2

Prepare the vegetables: chop the onion, slice the carrots and celery, and mince the garlic.

Step 3

Add the lentils, ham, onion, carrots, celery, and garlic to the crock pot.

Step 4

Sprinkle in the thyme, oregano, and add the bay leaf.

Step 5

Pour the chicken stock and diced tomatoes (with their juice) over the ingredients in the crock pot.

Step 6

Season with salt and black pepper, then stir everything gently to combine.

Step 7

Cover the crock pot and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours, until the lentils are tender and the flavors have melded together.

Step 8

If using a ham bone, remove it from the soup, shred any remaining meat, and stir the meat back into the soup. Discard the bone.

Step 9

Taste and adjust seasoning if needed, adding extra salt or pepper as desired.

Step 10

Serve the soup hot, garnished with fresh parsley if desired.
