Ingredients

  • 1 cup Dried lentils
  • 2 cups Cooked ham, diced
  • 2 medium Carrots, chopped
  • 2 stalks Celery stalks, diced
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 medium Potatoes, peeled and diced
  • 6 cups Chicken broth
  • 1 14.5 oz can Diced tomatoes, canned (undrained)
  • 1 piece Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Rinse the lentils thoroughly under cold water and set aside.

Step 2

Heat the olive oil in a skillet over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.

Step 3

Transfer the sautéed vegetables to the crock pot.

Step 4

Add the rinsed lentils, diced ham, diced potatoes, chicken broth, canned diced tomatoes (with juices), bay leaf, thyme, salt, and black pepper to the crock pot.
