Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3 medium Carrots
  • 3 pieces Celery stalks
  • 1 medium Yellow onion
  • 3 pieces Garlic cloves
  • 6 cups Chicken broth
  • 2 teaspoons Lemon zest
  • 3 tablespoons Fresh lemon juice
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 piece Bay leaf
  • 0.5 cup Uncooked rice or orzo pasta
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and slice the carrots into thin rounds. Chop the celery into small pieces. Dice the onion. Mince the garlic cloves.

Step 2

Place the chicken breasts in the bottom of the crock pot.

Step 3

Add the sliced carrots, celery, onion, and minced garlic over the chicken.

Step 4

Pour the chicken broth into the crock pot, making sure the chicken and vegetables are fully submerged.

Add the lemon zest, lemon juice, dried thyme, dried oregano, bay leaf, salt, and black pepper to the crock pot. Stir gently to combine.
