Ingredients

  • 4 pieces Chicken breasts (boneless, skinless)
  • 1 cup Wild rice mix
  • 3 cups Chicken broth (low-sodium)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Lemon zest
  • 4 cloves Garlic cloves (minced)
  • 2 tablespoons Olive oil
  • 1 medium Onion (diced)
  • 2 medium Carrots (sliced)
  • 2 stalks Celery stalks (sliced)
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side until lightly golden. Transfer the chicken to the crock pot.

Step 2

Add the diced onion, sliced carrots, and celery to the crock pot over the chicken.

Step 3

Rinse the wild rice mix under cold running water, then add it to the crock pot.

Step 4

In a small bowl, whisk together the chicken broth, lemon juice, lemon zest, minced garlic, dried thyme, dried parsley, salt, and black pepper. Pour this mixture over the ingredients in the crock pot.

Step 5

Cover the crock pot with the lid and cook on the low setting for 5-6 hours, or until the chicken is tender and the wild rice is fully cooked.

Step 6

Before serving, check the consistency of the dish. If the rice has absorbed too much liquid, stir in an additional 1/2 cup of warm chicken broth as needed.

Step 7

Serve the Lemon Garlic Chicken with Wild Rice hot. Optionally, garnish with fresh parsley for a burst of color and freshness.
