Ingredients

  • 1.5 pounds lamb stew meat
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery stalks, sliced
  • 3 medium potatoes, diced
  • 3 cloves garlic cloves, minced
  • 4 cups beef broth
  • 1 15-ounce can canned diced tomatoes
  • 0.75 cups pearl barley
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Add the lamb stew meat and brown on all sides, working in batches if necessary. Transfer the browned lamb to the crock pot.

Step 2

In the same skillet, sauté the diced onion, carrots, and celery for 5 minutes, until slightly softened. Add the minced garlic and cook for another minute. Transfer the vegetables to the crock pot.

Step 3

Add the diced potatoes, beef broth, canned diced tomatoes (with their juices), and barley to the crock pot.

Step 4

Stir in the chopped rosemary, thyme, bay leaf, salt, and black pepper.

Step 5

Cover the crock pot and cook on low for 7 hours, or until the lamb and vegetables are tender, and the barley is fully cooked.

Step 6

About 15 minutes before serving, stir in the frozen peas and let them heat through.

Step 7

Remove the bay leaf, taste, and adjust seasoning with additional salt and pepper if needed.

Step 8

Ladle the stew into bowls, garnish with fresh parsley, and serve warm.
