Ingredients

  • 4 pieces lamb chops
  • 3 medium carrots
  • 4 medium potatoes
  • 1 medium yellow onion
  • 4 pieces garlic cloves
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 2 sprigs fresh rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 cups red wine (optional)

Directions

Step 1

Peel the carrots and cut them into 1-inch chunks. Cut the potatoes into quarters (leave the skin on for added texture and nutrients). Slice the onion into thick wedges, and peel and crush the garlic cloves.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Season both sides of the lamb chops with salt and black pepper, then sear them for 2-3 minutes per side until browned. Remove from the skillet and set aside.

Step 3

In the same skillet, pour in the optional red wine if using, and scrape up any browned bits from the bottom of the pan to deglaze it. Simmer for 1-2 minutes, then remove from heat.
