Ingredients

  • 6 pieces lamb chops
  • 2 tablespoons olive oil
  • 4 pieces garlic cloves, minced
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 cup red wine
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 large carrots, peeled and cut into chunks
  • 4 medium potatoes, quartered

Directions

Step 1

Season the lamb chops with salt and black pepper on both sides.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the lamb chops for 2-3 minutes per side until golden brown. Set aside.

In the same skillet, add the minced garlic and sliced onion. Cook for 2-3 minutes until fragrant and slightly softened.

In the crock pot, add the carrots and potatoes at the bottom to form a base layer.
