  • 1 medium onion, diced
  • 3 medium carrots, peeled and chopped
  • 2 pieces celery ribs, chopped
  • 3 cloves garlic cloves, minced
  • 2 medium potatoes, diced
  • 0.75 cups pearl barley, rinsed
  • 14.5 ounces diced tomatoes, canned
  • 4 cups beef or chicken broth
  • 2 pieces bay leaves
  • 1 teaspoon fresh thyme, chopped
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Season the cubed lamb with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the lamb on all sides until browned, about 6-8 minutes. This step adds depth of flavor to the stew.

Step 3

Transfer the browned lamb to the crock pot.

Step 4
