Ingredients

  • 14 ounces kielbasa sausage
  • 30 ounces great northern beans (canned, drained and rinsed)
  • 14.5 ounces diced tomatoes (canned, undrained)
  • 2 cups chicken broth
  • 1 yellow onion (diced)
  • 2 carrots (peeled and sliced)
  • 2 celery stalks (sliced)
  • 3 garlic cloves (minced)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Slice the kielbasa into 1/2-inch thick rounds.

Step 2

In a skillet over medium heat, add olive oil and sauté the sliced kielbasa until lightly browned, about 3-4 minutes. Remove from heat.

In a 6-quart slow cooker, add the great northern beans, diced tomatoes (undrained), chicken broth, diced onion, sliced carrots, sliced celery, and minced garlic.
