  • 15 ounces canned kidney beans, drained and rinsed
  • 1 medium red bell pepper, diced
  • 1 tablespoon Italian seasoning
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup chicken or vegetable broth
  • 0.5 cup Parmesan cheese, shredded (for topping)
  • 2 tablespoons fresh basil, chopped (for garnish)

Directions

Step 1

In a skillet over medium heat, crumble and cook the Italian sausage until browned. Drain any excess fat and transfer the sausage to the Crock Pot.

Step 2

In the same skillet, sauté the diced onion for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant. Transfer to the Crock Pot.
