Ingredients

  • 8 slices thick-cut bacon
  • 6 pork sausages
  • 2 large onions
  • 3 cloves garlic
  • 6 medium gold potatoes
  • 3 large carrots
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups chicken or beef broth
  • 1 tablespoon apple cider vinegar

Directions

Step 1

1. Begin by slicing the bacon into 1-inch pieces and cooking it in a skillet over medium heat until crispy. Remove the cooked bacon and set it aside, leaving the rendered fat in the pan.

Step 2

2. In the same skillet, brown the sausages on all sides in the bacon fat. They do not need to be fully cooked, as they will finish cooking in the crock pot. Remove the sausages and set aside.

Step 3

3. Peel and slice the onions into thin rings and mince the garlic cloves. Add the onions to the skillet and sauté until softened and lightly golden, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute.

Step 4

4. Wash and peel the potatoes, cutting them into thick slices. Peel and slice the carrots into 1-inch chunks.

Step 5

5. In a crock pot, begin layering the ingredients: spread half the potatoes, carrots, and onions at the bottom, season with a pinch of salt and pepper, then repeat the process with the remaining half. Add the bacon and browned sausages on top of the vegetable layers.

Step 6

6. Pour the broth and apple cider vinegar evenly over the ingredients in the crock pot. Cover with the lid.

Step 7

7. Cook on low for 6 hours or until the vegetables are tender and the flavors are fully developed.

Step 8

8. Once cooked, sprinkle the stew with fresh parsley before serving. Serve hot alongside soda bread or crusty bread for a complete Irish-inspired meal.
