Ingredients

  • 2 pounds Beef chuck roast or pork shoulder
  • 0.5 cup Soy sauce
  • 1 can Coconut milk
  • 2 tablespoons Brown sugar
  • 3 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, minced
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground turmeric
  • 2 tablespoons Lime juice
  • 1 tablespoon Fish sauce (optional)
  • 2 tablespoons Cooking oil
  • 1 Onion, diced
  • 2 Carrot, sliced
  • 1 Red chili, finely chopped (optional)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Cut the beef or pork into 2-inch chunks, trimming off excess fat for a leaner dish.

Step 2

Heat cooking oil in a skillet over medium-high heat. Sear the meat on all sides until browned, about 2-3 minutes per side. Transfer the meat to the crock pot.

Step 3

In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the garlic, ginger, coriander, cumin, and turmeric, and stir for another 1 minute until aromatic. Transfer this mixture to the crock pot.

Step 4

In a medium bowl, combine the soy sauce, coconut milk, brown sugar, lime juice, fish sauce (if using), salt, and black pepper. Mix until well blended.

Step 5

Pour the sauce mixture into the crock pot over the meat. Add the sliced carrots and red chili (if using). Stir gently to coat all the ingredients in the sauce.

Step 6

Cover the crock pot and cook on low for 6-8 hours, or on high for 3-4 hours, until the meat is tender and easily pulls apart with a fork.

Step 7

Taste and adjust the seasoning with additional salt or lime juice, if needed.

Step 8

Serve the Indonesian beef or pork with steamed rice or noodles on the side. Garnish with fresh cilantro before serving.
