Prepare the cornbread by baking it according to a standard recipe or box mix. Allow it to cool completely before crumbling it into large pieces.
In a large mixing bowl, combine the crumbled cornbread and cubed day-old bread. Set the mixture aside.
In a skillet over medium heat, melt the butter and sauté the diced celery and chopped onion until softened, about 5-7 minutes.
