  • 1.5 pounds Beef stew meat
  • 1 large Yellow onion
  • 3 medium Carrots
  • 2 Celery stalks
  • 4 medium Russet potatoes
  • 4 Garlic cloves
  • 4 cups Beef broth
  • 2 tablespoons Tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Heat a large skillet over medium-high heat and add olive oil.

Step 2

Season the beef stew meat with salt and pepper, then brown it in the skillet until all sides are golden, about 5-7 minutes. Work in batches if necessary.

Step 3

Transfer the browned beef to the crock pot.

Step 4

Peel and chop the onion into medium dice. Add it to the crock pot.

Step 5

Peel and slice the carrots into 1/2-inch thick rounds. Dice the celery into small pieces and peel the potatoes, cutting them into 1-inch cubes. Add all these vegetables to the crock pot.
